We Love Parsnips

A small war has started in our house, which is a shame really as Steve and I have only just moved in together!

Still the lines have been drawn and the simmering begins early Sunday morning when we decide that Sunday lunch with all the trimmings is the order of the day. Trimmings for us mean, in a word, parsnips, and lots of them.

Roasted till they’re scrunchy on the outside and softly sweet on the inside, I smother mine with course grain mustard for extra bite, while trying to hide the fact that I have more on my plate than Steve.

My mother is another enemy at the Sunday dinner table. She used to cut them into the same shape as roast potatoes so they were hidden amongst the roasted veg. Now that’s plain mean!

They are the king of the root vegetable during the cold winter months for me and my folks and I love that we all share the same passion for parsnips on Sunday.

Still, I do tend to win the war!
